A Pumpkin Bread Recipe For Everybody

A delicious vegan pumpkin bread recipe for all to enjoy while in the fall and Halloween spirit.

Ingredients:

Bread:

  • 2 ¼ cup All-purpose flour

  • 1 tsp Baking soda 

  • 1 tsp Baking powder

  • 1 tsp Salt

  • ½ cup Cane sugar

  • 1 can pumpkin puree 

  • 1 tbsp Pumpkin spice powder 

  • 1 ¼ cup Plant-based milk (almond, oat, etc.)

  • 2 tbsp Apple cider vinegar (or lemon juice)

  • ½ cup melted unsalted vegan butter or neutral oil

  • ½ tsp vanilla extract

Enough batter for two loaves

Icing:

  • 2 cups Powdered sugar

  • ¼ Plant-based milk

  • ¼ tsp Vanilla extract

All vegan ingredients can be substituted for non-vegan ingredients if desired.

Instructions:

Bread:

  • Pour plant-based milk into a small bowl

  • Pour in apple cider vinegar or lemon juice 

  • Set aside and let sit for 5-10 minutes

  • Preheat oven to 400℉

  • Take another bowl perfect for whisking

  • Whisk together melted vegan butter or neutral oil, sugar, and vanilla extract

TIP: The mixture may seem lumpy at the moment, but that will be fixed when the other ingredients are added. 

  • After the milk mixture has finished curdling, pour it in and continue to whisk

  • Put in pumpkin puree and whisk until smooth

  • In a separate bowl whisk together:

    • All-purpose flour

    • Baking Soda

    • Baking Powder

    • Salt

    • Pumpkin spice powder

  • Sift dry ingredients into wet ingredients

TIP: Sifting helps aerate the dough and create a fluffier and better texture

  • Whisk until smooth

  • Oil a loaf tin or cake pan and line with parchment paper 

  • Pour batter into a baking dish

  • Place the dish  into a preheated oven for 35-45 minutes or until a toothpick inserted comes out clean

TIP: Make sure to keep watching the loaf in the oven; everybody's oven works differently

  • When finished let the dish cool for at least 2-3 hours

TIP: Cutting your bread too early will negatively affect the texture of the bread, the bread will end up tough instead of light and spongy.        

Icing: 

  • Whisk together powdered sugar, plant-based milk, pumpkin spice, and vanilla extract until smooth

  • Add milk or powdered sugar until the consistency is to your liking

    • Add more powdered sugar for a thicker consistency

    • Add more milk for a thinner consistency

  • After the pumpkin bread is cool, pour the icing over and smooth it out

  • Let it cool for another 25-30 minutes before slicing and serving
