Vegan Butternut Squash Mac n Cheese

Make sure to head over to your local grocery store and get the ingredients to this vegan butternut squash mac n cheese recipe. With this pasta all your  creamy, buttery, and cheesy needs will be satiated.

Ingredients

  • Pasta

    • Macaroni

  • Sauce

    • 1 cup chopped and peeled butternut squash

    • 1 tbsp red pepper flakes 

    • To taste salt

    • To taste pepper

    • 1 tbsp garlic powder

    • 2 tbsp paprika

    • 2 tbsp dried basil

    • 2 tbsp dried oregano

    • ¼ cup almond/oat milk (unsweetened)

    • 1 whole garlic bulb

    • ¼ cup olive oil

    • 4 tbsp of nutritional yeast

  • Garnish

    • Fresh basil (optional)

Directions

  1. Preheat oven to 400 degrees Fahrenheit

  2. First , chop and peel a whole butternut squash

  3. Next, add the peeled and chopped squash to a lined baking sheet

  4. Add olive oil, salt, pepper, red pepper flakes, garlic powder, paprika, dried basil and oregano to the squash on the baking sheet

  5. Mix everything together

  6. Before putting the squash in the oven, chop the top part of a whole bulb of garlic so that the many cloves are visible

  7. Put the bulb on the baking sheet and add a little bit of olive oil

  8. Put into the oven and bake for 15 minutes

  9. While the squash and garlic roast, add water and a 1 tbsp of salt to a pot and bring it to a boil

  10. After the water begins to boil add your pasta

  11. After they are finished baking, add the squash to a blender

  12. Squeeze out the inside of teh baked bulb of garlic into the blender as well

    1. Make sure the garlic skin does not get in there as well

  13. Then, in the blender add your plant based milk and your nutritional yeast

  14. Blend until smooth

  15. After the blender is finished add the sauce to a pan with some more olive oil 

  16. Cook until sizzling softly, then add cooked pasta

  17. Mix the sauce and pasta together

  18. Then, plate with some garnish of fresh basil
