Vegan Butternut Squash Mac n Cheese

Sauce
1 cup chopped and peeled butternut squash
1 tbsp red pepper flakes
To taste salt
To taste pepper
1 tbsp garlic powder
2 tbsp paprika
2 tbsp dried basil
2 tbsp dried oregano
¼ cup almond/oat milk (unsweetened)
1 whole garlic bulb
¼ cup olive oil
4 tbsp of nutritional yeast
Garnish
Fresh basil (optional)
Directions
Preheat oven to 400 degrees Fahrenheit
First , chop and peel a whole butternut squash
Next, add the peeled and chopped squash to a lined baking sheet
Add olive oil, salt, pepper, red pepper flakes, garlic powder, paprika, dried basil and oregano to the squash on the baking sheet
Mix everything together
Before putting the squash in the oven, chop the top part of a whole bulb of garlic so that the many cloves are visible
Put the bulb on the baking sheet and add a little bit of olive oil
Put into the oven and bake for 15 minutes
While the squash and garlic roast, add water and a 1 tbsp of salt to a pot and bring it to a boil
After the water begins to boil add your pasta
After they are finished baking, add the squash to a blender
Squeeze out the inside of teh baked bulb of garlic into the blender as well
Make sure the garlic skin does not get in there as well
Then, in the blender add your plant based milk and your nutritional yeast
Blend until smooth
After the blender is finished add the sauce to a pan with some more olive oil
Cook until sizzling softly, then add cooked pasta
Mix the sauce and pasta together
Then, plate with some garnish of fresh basil
